Eight Settlers Distillery

Founded in 2020, quite possibly the most difficult period in our countries history, Eight Settlers Distillery & Restaurant is the culmination of a longtime dream to build a distillery and share the finest local foods and spirits with our community. Battling against restrictions brought on by a global pandemic, Radu and Katia’s sheer grit and determination are reminiscent of the first settlers to arrive in Utah. 

The distillery itself is a blend of the 1850’s traditional vintage western style with a modern twist of the second industrial revolution. The Chef’s inspiration for the menu is Modern American with traditional twists, while the spirits are distilled and blended to the highest standards under the watchful eye of Head Distiller and Master Blender Dylan Kalil using only the best grains available.

With absolutely breathtaking views of Salt Lake valley, chef prepared dining, and onsite distilled/blended spirits, their Cottonwood Heights location will leave you only wanting more. We know you’re going to love your experience with them!
